CAKES
We can create many styles and flavors of classically designed wedding cakes here at the castle.
If you choose to have your cake brought in we will cut and serve your cake at no charge.
Cakes should be delivered within 90 minutes prior to your event starting. 
Earlier delivery and storage can be arranged at additional cost.

Each cake can be classified in terms of flavor, filling, size and layers, design as outlined below
We strongly recommend decorating with fresh flowers...
Most cakes require only a minimal number of stems, which we will arrange at no charge.

Standard Flavored Cakes (3 layers)
Chablis Cake… a white cake that incorporates white wine in the mix for a rich flavor and moist texture    $2.50 per person
Chocolate Cake… a devils food style mix    $2.75 per person
Marble Cake… a blend of 2/3 chablis cake swirled with 1/3 chocolate cake  $2.75 per person
Black & White… each cake contains one layer of white chablis cake and one layer of devils food chocolate cake  $3 per person

Premium Cakes  (3 layers)
Carrot Cake… a moist, flavorful homemade carrot cake without nuts or fruit (raisins)     $4 per person
Cheesecake… our creamy style signature cheesecake… this cake must be presented on separate pedestals    $4 per person
Death by Chocolate flourless chocolate cake with ganache and sugared fruit  $4.50 per person
Rum Cake made with dark rum $3.50 per person

Icing:
A buttercream-style icing that is stabilized for presentation in the dining room (refrigeration not needed during the event) is used. 
No charge for decoration that is limited to borders where each cake layer meets.
Top edge can be squared off or curved contour (see photo to the right, below)

Additional layers (maximum 5 layers) $30 per layer
Different flavors for each layer of cake (for example: one layer of carrot cake, one layer of chocolate) $30 for two flavors, $45 for three
Stacked with pillars between layers $25
Set on large pillars above fountain with tinted water $45
Layered with strawberries $40
Layered with raspberries $50
Layered with lemon, lime or orange curd $40
Layered with chocolate mousse $50
Dot, swirl, swag or other basic icing pattern on the cake sides $20 (second cake from left below)
Pearl white Beads to highlight the icing design $40
Ribbon banding or decoration $20 (cake to the right, blue ribbon, below)
Odd shapes (other than round) including square, heart, octagonal etc. $25 per layer
A typical cake has two layers inside each tier of the cake… additional layers are $15 each
Any coloration of icing in the decoration $40

Items we do not offer
Sugar or royal icing flowers or designs
Strict buttercream icing (it will not hold up in the dining room)
Rolled fondant icing (refrigerated marble table needed for proper production, and it doesn’t taste very nice either!)

Carrot Cake...individual squares with cream cheese icing
Bananas Foster ... chef/attendant flambe bananas with brown sugar, butter, cinnamon and brandy

zucchini bread pudding... rich zucchini bread infused with cognac cream sauce
    or
Hot Apple Crisp... apples baked with cinnamon, nutmeg
                       and topped with an oatmeal crisp topping
Chocolate jumbos... light but richly flavored chocolate cookies
Strawberries dipped in Chocolate drizzled with white chocolate
Russian Tea Cookies... nut filled ball-shaped cookies dusted with powdered sugar
(you may substitute death by chocolate for: chocolate jumbos and tea cookies)

Chocolate Truffles... raspberry liqueur infuses these all time favorite balls of rich chocolate $2.75
Rum Balls... white cake infused with Jamaican dark rum with nuts and powdered sugar $2.75
